HVCC Externship
Summary
A sixteen-month program designed to 1) provide university graduates (or other
qualified persons) management-level experience; and 2) equip externship
participants with superior resume development.
Prospectus
The HVCC Externship will be divided into three areas of concentration:
1) A la Carte Service: Candidates will be trained in a la carte food service and
will be given graduated responsibilities in beverage operations (six months)
2) Banquet Service: Candidates will be trained in banquet service and will be
given graduated responsibilities in banquet/wedding coordination (six
months)
3) Satellite Service Areas: Candidates will be given a supervisory role over our
seasonal satellite services (beverage cart & pool operations) (four months)
At the conclusion of the program, participants will have the following resume
credentials:
• Full awareness of the Country Club industry and its hospitality demands
• Points of Service mastery in all F&B outlets
• Direct supervisory authority over multiple employees
• Calculating and controlling food & beverage costs
• Assisting in menu development
• Using the Profit & Loss statement as a decision-making tool
• Supervising the Wine List inventory (exceeding 100 bottles)
• Assisting in Wine List development
• Working within budgeted parameters and guidelines
• Mastery of Club Website Portal & Point-of-Sale systems
• Familiarity with banquet planning and the banquet consultation process
During the last four months of the externship, candidates will be given direction on
1) superior placement opportunities; 2) resume formation; and 3) interview
coaching. Remuneration
Each externship participant will be assigned a wage structure based on experience
and education. Wages and benefits will be discussed during the interview process.
